Steamed Fish scores and marinates a whole fish, steams it tender, then tops it with shredded spring onion and ginger and a drizzle of smoking-hot oil.
Score the fish on both sides, rub evenly with salt and cooking wine, add a few ginger slices and marinate for 10 minutes.

Place the marinated fish on a plate, put it in the steamer and steam for 15 minutes.

Heat a spoonful of oil until smoking and pour it over the fish.
