Thai basil stir-fried ground pork (Pad Krapow Moo Sap) fries minced pork with pounded chilli-garlic paste, soy, and oyster sauce, plus Thai basil.
First, pound the cilantro root, fresh chilies, garlic, and dried chilies together until well combined. Set this mixture aside. Heat a wok over high heat, adding just enough oil to coat the bottom. Once the oil is hot, reduce the heat slightly. Add the pounded chili-garlic mixture to the wok and stir-fry until it becomes fragrant. Add the ground pork.
將芫荽根、新鮮辣椒、蒜頭同乾辣椒一齊搗碎,備用。用大火燒熱鑊,加入足夠食油蓋住鑊底,油熱後略調細火。加入搗碎嘅辣椒蒜頭混合料,炒香後加入豬絞肉。
Continue to stir-fry the pork until it is almost fully cooked. At this point, season the dish with the seasoning powder, sugar, light soy sauce, oyster sauce, and seasoning sauce. Add a splash of dark soy sauce to enhance the color.
繼續炒至豬絞肉差不多熟透。用調味粉、砂糖、生抽豉油、蠔油、調味醬油同少許老抽豉油(用於上色)調味。
Stir all the ingredients together well until everything is well combined. Once the flavors are balanced to your liking, add the basil leaves and stir-fry for just a few seconds. Turn off the heat and transfer the stir-fry to a plate for serving. Optionally, you can top it with a fried egg.
將所有材料炒勻。味道調好後,加入九層塔葉炒幾秒鐘。熄火,盛入碟中上桌。如果喜歡,可以加上一隻煎蛋。
