Ginisang puting hipon at malutong na toge na may kutsay, tinimplahan ng puting paminta at sesame oil.
Hugasang mabuti ang puting hipon, patuluin, at itabi.
Wash the white shrimp clean, drain well, and set aside.
Painitin ang kawali at magdagdag ng mantika. Igisa ang sibuyas-dahon at luya hanggang umalingawngaw, idagdag ang hipon at igisa ng 2–3 minuto hanggang magbago ng kulay. Buhusan ng cooking wine.
Heat the wok and add oil. Stir-fry the spring onion and ginger until fragrant, then add the shrimp and stir-fry for 2–3 minutes until they change colour. Deglaze with the cooking wine.
Ihalo ang toge at igisa ng 1 minuto hanggang lumambot, timplahan ng asin at puting paminta.
Add the mung bean sprouts and stir-fry for 1 minute until softened, then season with salt and white pepper.
Idagdag ang hiniwang kutsay at igisa ng halos 10 segundo hanggang umamoy mabango, patayin ang apoy. Haluan ng chicken powder at sesame oil.
Add the cut chives and stir-fry for about 10 seconds until fragrant, then turn off the heat. Toss through the chicken bouillon powder and sesame oil.
Ilipat sa plato at ihain.
Transfer to a plate and serve.
