Salmon Nostalgia memadukan steak salmon air fryer dengan saus gaya Vietnam dari tomat, bawang, kecap ikan dan cabai Thailand.
Persiapan ikan: bersihkan ikan dengan garam dan bilas dengan air. Tepuk kering sebelum membumbui ringan kedua sisi dengan garam laut dan lada hitam bubuk.
Fish Preparation: Clean the fish with salt, then rinse it well with water. Pat the fish dry before lightly seasoning both sides with sea salt and ground black pepper.
Semprotkan minyak netral di kedua sisi dan kulit. Masak dalam air-fryer dengan foil di bawah pada 198°C selama 20-25 menit (tidak perlu dibalik) atau hingga keemasan.
Spray both sides of the salmon, including the skin, with neutral oil. Cook it in an air fryer at 390°F for 20-25 minutes, or until golden. Place foil on the bottom of the air fryer basket; there's no need to flip the fish during cooking.
Saat salmon memasak, buat saus: tumis bawang putih, bawang merah, dan bawang bombay putih hingga bawang transparan. Kemudian tambahkan tomat dadu, gula, kecap ikan, lada hitam bubuk.
Sauce Preparation: While the salmon is cooking, prepare the sauce. Sauté the minced garlic, minced shallots, and diced white onions in 2 tablespoons of neutral oil until the onions become translucent. Add the diced Roma tomatoes, sugar, fish sauce, and 1 teaspoon of ground black pepper.
Tumis selama 4-5 menit, kemudian tutup dan biarkan mendidih kecil selama 3 menit.
Sauté this mixture for 4-5 minutes. Cover the pan with a lid and let it simmer on low heat for 3 minutes.
Tambahkan daun bawang dan beberapa cabai Thailand utuh (jika ingin pedas, bisa dicincang). Aduk merata, kemudian biarkan mendidih kecil tanpa tutup selama 2 menit atau hingga saus mengental. Cicip dan sesuaikan.
Add the chopped green onions and a couple of whole Thai chilies (remember, you can mince the chilies if you prefer a spicier sauce). Toss everything evenly, then let the sauce simmer uncovered for 2 minutes, or until it has reduced to your desired consistency. Taste the sauce and adjust the seasonings as needed.

Spoon the sauce onto a plate, then place the cooked salmon on top. Serve immediately and enjoy!
