Drain the cooked pasta, making sure to reserve about 1/2 cup of the pasta water. Return the pasta and the reserved water to the same pot. I like to add a drizzle of olive oil and a sprinkle of black pepper at this stage. Stir in half of the made sauce to coat well the tagliatelle. Transfer the pasta to a serving bowl, then spoon the remaining sauce over the top. For an extra touch, grate a little more nutmeg and sprinkle with Parmesan cheese, if desired.
