Apricot Almond Clafoutis bakes quartered apricots in a light batter of egg, yogurt, and almond flour, best served warm.
Preheat your oven to 350°F (180°C).

Wash and well dry the apricots. Cut them into quarters, then arrange these pieces in either a baking dish or individual ramekins.

In a mixing bowl, combine the cane sugar, vanilla sugar, and the large egg, stirring them together well.

Add the yogurt or fromage blanc to the mixture and stir until it's fully incorporated. After that, fold in the almond flour and stir once more. Pour this batter evenly over the apricots you made earlier.
