Broccoli and cottage cheese muffins blend eggs, chopped broccoli, carrot and cottage cheese into savoury muffins baked with Parmesan.
Combine the eggs, olives, spices, mint, and cottage cheese in a bowl. Add the finely chopped broccoli and carrot. Mix in the breadcrumbs and baking soda.

Continue stirring until all ingredients are evenly combined. Spoon the mixture into muffin molds, then sprinkle some Parmesan cheese over the top of each. Bake in a preheated oven at 350°F (180°C) for about 20 minutes.
拌勻後倒入鬆餅模具,面層灑上巴馬臣芝士。放入焗爐以180°C烤約20分鐘。
Allow the muffins to cool down a bit before carefully taking them out of their molds.
稍微放涼後脫模。
