Baked frittata of eggs whisked with cooked spinach, chopped speck, and Parmesan, topped with extra speck and baked until set.
Finely chop 1 3/4 ounces of the speck (about 50 grams). Set the remaining speck slices aside for later.

In a mixing bowl, combine the cooked spinach, the chopped speck, a pinch of salt, and the grated Parmesan cheese. Stir these ingredients together.

Crack the eggs into the bowl with the other ingredients. Stir everything well until it's all evenly combined.
