Eggplant Parmigiana stacking grilled eggplant slices with ham and provolone, spooned with tomato sauce and baked with fresh basil.
Lightly grease a baking dish with extra virgin olive oil. Arrange a layer of grilled eggplant slices to cover the bottom of the dish.
