Coconut Red Bean Pudding steams a fragrant coconut-milk and rice-flour batter studded with red beans into a soft, sweet Chinese-style cake.
Combine the evaporated milk, coconut milk, rice flour, cornstarch and light soy sauce, then strain and set aside.
混合淡奶、椰漿、粘米粉、粟粉、生抽,過篩備用。
Cook the red beans and set aside, or use canned red beans. Heat the red bean liquid with sugar, then pour it into the batter and stir until even (use plain water if there is no red bean liquid).
煮熟紅豆備用,亦可用罐頭紅豆取代;紅豆水加糖煮熱,然後倒入麵糊中攪拌均勻(沒有紅豆水可用清水代替)。
Pour into a mould and steam for about 30 minutes.
倒入模中蒸約 30 分鐘。
