1 block tofu
豆腐 1 磚
2 century eggs
皮蛋 2 隻
1 pointed chilli
尖椒 1 條
2 bird's eye chillies
指天椒 2 條
4 cloves garlic
蒜頭 4 瓣
1 sprig coriander
芫荽 1 棵
2 tbsp Zhenjiang vinegar
鎮江醋 2 湯匙
1 tbsp light soy sauce
生抽 1 湯匙
1 tbsp chilli oil
辣椒油 1 湯匙
1 tbsp Sichuan peppercorn oil
花椒油 1 湯匙
1 tbsp sesame oil
麻油 1 湯匙
2 tsp sugar
糖 2 茶匙

First deseed the pointed chilli, then dice the bird's eye chilli and coriander.

Dice the century eggs and set aside.
