Four-Treasure Mushroom Vegetarian Soup simmers golden enoki, turkey tail, maitake, agaricus blazei, and tea tree mushrooms with chestnuts and corn.
Four-Treasure Mushroom Vegetarian Soup
四寶素湯
Serves 4 or more:

3 candied dates
蜜棗 3 粒
15 g golden enoki mushrooms
黃金菇 15 克
15 g turkey tail mushrooms
雲芝 15 克
10 g maitake mushrooms
舞茸 10 克
10 g agaricus blazei mushrooms
姬松茸 10 克
10 g tea tree mushrooms
茶樹菇 10 克
15 bowls water
清水 15 碗
Salt, to taste
鹽 適量
12 chestnuts
栗子 12 粒
1 corn cob
粟米 1 條
01Rinse the ingredients, then soak them for about 30 minutes.
02Peel the corn, then cut it into chunks.
03Add enough water to a soup pot, bring to a boil, then add all the ingredients.
04Cover with a lid and simmer over high heat for about 1 hour, then season with salt to taste at the end.
