Garlic Steamed Eggplant tops tender steamed eggplant with a savoury sauce of minced garlic, oyster sauce, soy, and chili, finished with fresh spring onion.
Cut the eggplant into pieces and score the surface with shallow lines. Soak in white vinegar water for 3 minutes to prevent darkening.

Mix the minced garlic, spring onion, chili, oyster sauce, light soy sauce, sesame oil and sugar.
混合蒜蓉、蔥、辣椒、蠔油、生抽、麻油、糖。
Steam the eggplant over medium heat for about 10 minutes, pour over the sauce and spring onion, then steam for another 3 minutes.
茄子用中火蒸約 10 分鐘,淋上醬汁及蔥花,再蒸 3 分鐘。
