HK-Style Bitter Melon with Scrambled Eggs salts sliced bitter melon to tame its edge, then stir-fries it folded into soft scrambled eggs.
Cut open the bitter melon and use a spoon to scoop out the pith in the center.
將苦瓜對半切開,再用湯匙將中間的籽和白色瓜囊徹底挖除。
Slice the bitter melon into thin pieces, add coarse salt, mix well, and let sit for about 10–15 minutes. (This helps remove the bitterness.) Rinse clean with water and drain.
把處理好的苦瓜切成薄片。將苦瓜片放入碗中,撒上粗鹽並拌勻,靜置約10至15分鐘(這個步驟有助於去除苦味)。時間到了之後,用清水將苦瓜片徹底洗淨,再瀝乾水分備用。
Beat the eggs, add white pepper powder, stir well and set aside.
將雞蛋打入碗中,加入白胡椒粉,拌勻後先放在一旁備用。
Heat oil, add the bitter melon with salt and sugar, stir-fry until slightly dry. Spread the bitter melon flat in the pan. Pour in the egg mixture, and once half set, flip. Continue cooking until done.
熱鍋後倒入適量食用油,放入苦瓜片、鹽和糖,翻炒至苦瓜稍微收乾水分。將苦瓜片均勻地平鋪在鍋底,再倒入之前準備好的蛋液。待蛋液煎至半凝固狀態時,再翻面繼續炒,直到蛋液完全熟透即可。
Cooking note: If you don't like the bitter taste, make sure to scoop out the white pith more thoroughly. For a crunchier texture, cut the bitter melon into thicker slices.
烹煮心得:如果對苦味比較敏感,務必將苦瓜內部的白色瓜囊刮得更乾淨一些。若偏好爽脆的口感,則可以將苦瓜切得稍微厚實一點。
