Baked Apple Fritters dip apple rings in a light yogurt batter lifted with whipped egg white, then bake with sugar until set and golden.
Preheat your oven to 400°F (200°C). Prepare the apple: peel it, remove the core, and then slice it into thick rings, aiming for about 1/2 inch (1 cm) in thickness. Carefully separate the egg white from the yolk. In a clean bowl, beat the egg white along with a small pinch of salt until it forms stiff peaks. In a separate bowl, whisk together the egg yolk, Greek yogurt, and either the flour or cornstarch. Gently fold the beaten egg white into this mixture. If you wish, you can also add a little ground cinnamon or vanilla powder at this stage.

Take each apple ring and dip it into the batter, ensuring it's well coated. Immediately place the coated rings onto a baking sheet that has been lined with parchment paper, and then sprinkle them with sugar. Bake for a total of 20 minutes.

About five minutes before the baking time is complete, carefully flip the fritters over. Once done, serve them warm and enjoy!
