Vegetable Fritters bind grated potato and carrot with flour and Parmesan, then pan-fry the patties until both sides turn golden and crisp.
Wash and peeling the potato and carrots.

Grate both vegetables using a coarse grater. Let them rest for 10 minutes, then well squeeze out any excess water.

Put the grated vegetables in a large bowl. Add the flour, Parmesan cheese, salt, and pepper, and stir everything together until it's evenly combined.

Heat a nonstick skillet with a little oil.

Cook for 2 to 3 minutes on each side, until they turn golden brown.

Once cooked, remove the fritters from the skillet and place them on a paper towel before serving.
