Steamed taro with pork ribs in black bean sauce: ribs marinated in soy, oyster sauce and black beans, then steamed over taro until soft and savoury.
Wash the pork ribs and cut into small pieces, wash and peel the taro and cut into small chunks, and wash and chop the garlic and fermented black beans.
排骨洗淨切細件,芋頭洗淨去皮切細件,蒜頭、豆豉洗淨切碎。
Place the cut taro in a larger bowl. Heat oil in the pan, sauté the chopped garlic and fermented black beans until fragrant, add light soy sauce, oyster sauce and salt and stir-fry evenly, then add to the ribs along with cooking wine and cornstarch, mix well and arrange on top of the taro. Steam for about 20 minutes.
將切好的芋頭放入大碗中,鑊中下油,放入蒜蓉及豆豉炒香,加生抽、蠔油、鹽炒勻後加入排骨,加料酒、生粉撈勻,鋪喺芋頭上面,入鑊蒸約 20 分鐘。
When done, drizzle with a little hot oil and serve.
出鑊後淋上適量熱油即可。
