Tam sua with cucumber pounds chili, tomato, lime and fermented fish sauce in a mortar, then tosses with cucumber and rice vermicelli.
Put the chilies in a mortar and pestle. Sprinkle in a small amount of MSG; this helps to prevent splattering as you pound the chilies.
