Tomato, Tuna and Egg Fried Rice scrambles eggs with diced tomato, garlic and canned tuna, then tosses in rice with soy sauce and sesame oil.
Dice the tomatoes. Mince the garlic. Heat the wok and pour in oil (you can also add the oil from the canned tuna).

Scramble the eggs first; once the eggs are cooked, add the tomatoes, garlic and tuna and stir-fry together.

Add the rice, then add soy sauce, ground pepper, sesame oil or aromatic oil, and salt (you can drizzle in the tuna can oil at this point too).

Stir-fry continuously until all the rice is evenly coloured. If you have spring onion, chop some for a better presentation.
