Sweet and Savory Teriyaki Chicken ay sinasalo ang hita ng manok, saka pinakukuluan sa toyo, mirin, at sake hanggang lumapot ang sauce.
Ilagay ang manok na skin-side pababa sa tuyong kawali at i-sear sa katamtaman-mahinang apoy hanggang maging gintong kulay at malutong ang balat. (Ang pagluluto hanggang malutong ay nagpapasarap ng lalo.)
Put the chicken, skin-side down, in a dry skillet. Sear it over medium-low heat until the skin turns golden and becomes well crispy. (Achieving this crispiness really enhances the flavor!)
Baligtarin ang manok at i-sear ang kabilang panig hanggang maging kayumanggi. Gamitin ang papel na tuwalya upang punasan ang sobrang taba mula sa kawali.
Flip the chicken over and sear the other side until it's nicely browned. Carefully use a paper towel to wipe away any excess fat that has accumulated in the pan.
Idagdag ang tubig, mirin, sake, at asukal sa kawali kasama ang manok. Takpan at pakuluan sa mahinang apoy ng 6–7 minuto.
Add the water, mirin, sake, and sugar to the skillet with the chicken. Cover the skillet and let it simmer on low heat for 6 to 7 minutes.
Alisin ang takip, idagdag ang toyo, at pakuluan, paminsan-minsang baligtarin ang manok, hanggang lumapot ang sauce at mabalutan ang manok. Hiwain ang manok sa bite-sized na piraso at buhusan ng sauce.
Remove the lid, then stir in the soy sauce. Continue to simmer, turning the chicken occasionally, until the sauce visibly thickens and well coats the chicken. Once cooked, slice the chicken into bite-sized pieces and drizzle them with the delicious sauce.
Para sa larawang ipinapakita, gumamit ako ng isang piraso ng chicken breast na may karamihang balat na tinanggal para gumawa ng mas magaang na bersyon para sa aking anak na nag-diet.
Please note: For the accompanying photo, I opted to use one piece of chicken breast with most of the skin removed. This was to create a lighter version for my daughter, who is currently on a diet.
