Ayam digoreng keemasan, lalu dimasak dengan tausi, bawang merah, cabai rawit dan bumbu dalam saus kecap yang gurih.
Ayam (250 g — disarankan sayap; potong tiap sayap di tengah lalu melintang jadi empat bagian; lumuri dengan 1 sdt garam, setengah sdt gula, 1 sendok saus tiram dan setengah sendok maizena, segel dengan 1 sendok minyak agar tetap lembap, marinasi 10 menit). Segenggam kecil tausi dan 2 cabai rawit; 2 bawang merah, daun bawang, jahe dan bawang putih secukupnya.
Chicken (250 g — wings are recommended; cut each wing through the middle then crosswise into four pieces; toss with 1 tsp salt, half a tsp sugar, 1 spoon oyster sauce and half a spoon cornstarch until coated, then seal in 1 spoon oil to keep it moist and marinate for 10 minutes). A small handful of fermented black beans and 2 bird's eye chillies; 2 shallots, plus spring onion, ginger and garlic to taste.
Beri minyak di wajan, taburi sedikit garam agar tidak lengket, lalu goreng potongan ayam hingga kedua sisi keemasan dan sedikit gosong.
Add oil to the pan, sprinkle in a little salt to stop sticking, then fry the chicken pieces until both sides are golden and lightly charred.
Masukkan jahe, bawang putih, bawang merah dan tausi, tumis hingga harum, lalu aduk 1 sendok kecap asin dan sedikit kecap manis hingga rata.
Add the ginger, garlic, shallots and black beans and fry until fragrant, then stir in 1 spoon light soy sauce and a little dark soy sauce until evenly mixed.
Pindahkan ke panci tanah liat, tuang arak beras Kanton melingkar di pinggir, masak dengan api besar selama 3 menit. (Bisa juga langsung di wajan.)
Transfer to a clay pot, drizzle a circle of Cantonese rice wine around the edge, and braise over high heat for 3 minutes. (You can skip the clay pot and use the wok directly.)
Masukkan cabai rawit, kecilkan api dan masak lagi selama 2 menit.
Add the bird's eye chillies, lower to a gentle heat and braise for another 2 minutes.
Sajikan dan beri potongan daun bawang di atasnya.
Dish up and top with spring onion segments.
