Lightly grease a baking dish with extra virgin olive oil. Arrange a layer of grilled eggplant slices to cover the bottom of the dish.

On top of each eggplant slice, place a piece of cooked ham and a piece of provolone cheese. Cover each of these with another slice of eggplant.
