Once the 4 hours of cooking time has passed, carefully transfer the sauce from the slow cooker into a saucepan. In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Stir this cornstarch slurry into the sauce in the saucepan. Place the saucepan over medium-high heat and bring the sauce to a simmer; it should thicken quite quickly. Serve the pork chops with the thickened sauce generously poured over them.
