Garlic Roasted Eggplant bakes eggplant until meltingly soft, then crowns it with a stir-fried garlic, chilli and oyster sauce dressing.
Brush oil over the surface of the eggplants and roast in the oven at 180°C for 30 minutes (preheat the oven to 180°C for 5 minutes first).

In hot oil, stir-fry the minced garlic, chilli, soy sauce, oyster sauce, sugar, cumin and white pepper until fragrant. Turn off the heat, then stir in a little sesame oil and set aside.
熱油落蒜蓉、辣椒、豉油、蠔油、糖、孜然粉及胡椒粉炒香,熄火後再加入適量麻油拌勻備用。
Slice open the eggplants, spread the sauce over them, and roast again in the oven at 180°C for 10 minutes.
切開茄子並鋪上醬汁,再放入焗爐 180 度烤 10 分鐘。
Finally, sprinkle with chopped spring onion and serve.
最後撒上蔥花即成。
