Poached Pork Belly with Garlic Sauce simmers belly with ginger and Sichuan peppercorns, then rolls thin slices around celtuce in garlic-chilli sauce.
Wash the pork belly and blanch in boiling water, then remove.
五花腩洗淨,放入滾水中汆水,撈起。
Peel the celtuce, cut into thin strips, blanch briefly, then drain.
萵筍去皮切絲,焯水後撈起。
Bring water to the boil in a pot. Add spring onion, ginger, salt, Sichuan peppercorns, and the pork. Simmer until the pork is cooked through, then remove, cool, and slice thinly.
鑊內加水煮滾,下葱花、薑、鹽、花椒及五花腩,煮至肉熟透,撈起放涼,切片。
Roll the celtuce strips inside each slice of pork belly, then arrange on a plate.
用五花腩片捲起萵筍絲成卷,排在碟中。
In a bowl, mix the minced garlic, soy sauce, concentrated chicken stock, and chilli oil into a dressing. Pour over the rolls and serve.
將蒜蓉、醬汁、雞汁、辣椒油放入碗中,調成味汁,淋在碟上即成。
